Kanetsune’s santoku reaches 11.5 inches overall with a 6.75-inch blue steel blade. The cutting core uses Japanese Aogami steel—Hitachi Metal’s blend of chromium and tungsten added to traditional Shirogami—clad on both sides with 410 stainless steel for edge retention and easier maintenance. The blade is hardened to 61-62 HRC. A black smooth wood handle and stainless bolster complete the full-tang design, giving it a traditional Japanese kitchen knife feel suited to slicing, dicing, and mincing tasks.
